This is the easiest soup recipe and perfect for fall!
Serve with a grain-free dinner roll for dipping! Simply Mills is a boxed mix and you add the oil, water, and binder. It calls for eggs but you can sub Aquafaba or make a flax-egg.
2 cups canned organic pumpkin
1 cup organic full fat coconut milk
4 cups organic vegetable broth (beware of “natural flavors” which is an unregulated term)
2 tsp minced fresh thyme
1/2 tsp fresh grated nutmeg
1 tsp paprika or cayenne
salt and pepper to taste
1. Combine all ingredients in a medium saucepan and bring to a simmer.
2. Serve and enjoy! If it is too thick add a little more broth!
