It’s getting to be that time of year again, when we all start craving pumpkin everything! Here’s a slightly different pumpkin smoothie that is just as delicious as the recipe we posted last fall (see here!). Pumpkin is a great source of vitamin A (great for you teeth, skin and eyes) and potassium (essential for nerve and muscle function). Here’s the perfect recipe to transition your summer smoothie into fall. (Make sure to buy plain canned pumpkin and not canned pumpkin pie mix!)
Ingredients:
1 banana, frozen
~3/4 cup non-dairy milk
1/2 can pureed pumpkin
1 tsp cinnamon
1 dash nutmeg
1/2 tsp pure vanilla extract (see my recipe for homemade vanilla extract in this post)
*optional: add a dash of maple syrup if you like a little added sweetness
Directions:
1. Combine all ingredients in blender and mix until smooth.
2. Sprinkle with pumpkin pie spice and chia seeds on top if you like!
