My nutritionist friend Robyn came to visit from the U.K. and brought us this spice mix that I just can’t get enough of! We put it on everything- pork chops, chicken, eggs, veggies…..and if I make Jasmine white rice (which is SCD friendly) cooked in leftover broth and season it with the magic spice blend, I literally can hardly stop eating it!
The combination of porcini mushrooms with smoked sea salt gives everything we eat a wonderful deep flavor. Really, it’s worth a try!
Ingredients:
1 oz (50g) Dried Porcini Mushrooms (SCD legal but high FODMAP)
2/3 cup salt of choice – I used smoked sea salt pictured (sideways..ooops) below
1 tablespoon of dried chili flakes
1 tablespoon dried thyme powder
Directions:
Add all the above in the vitamix and blend until smooth. Store in an air tight container. Use liberally.
Notes from Robyn:
I used more thyme (you could substitute in any dried herb you like), and smoked salt.
I got my best ever smoked sea salt from Wholefoods but you can probably get it from the health store locally. I like the Maldon brand Smoked Sea Salt. The black ones are really heavy.
You should also be able to get porcini mushrooms at the health food store, but you can also get them from good old Amazon.
