Want to make your food be medicine? THIS is it!
This combo is about as healthy as it gets!!!
- A blend of fresh grated ginger and fresh grated turmeric make it anti-inflammatory.
- The cauliflower is of the cruciferous vegetable family and as such, it supports phase 2 of liver detoxification pathways. If you pay any attention to your health, you probably know that we now live in a toxic soup of a world. We can make daily choices to reduce our exposure – but it’s also important to “head em up and move em out” via the liver.
- If you use your own home made healing healthy broth, you are doing your GI tract a favor.
And, besides being your medicine, it tastes DELICIOUS! This is sweet and savory!
Non-Dairy, Cream of Cauli & Carrot Soup
Recipe Ingredients:
1 T Coconut Oil
2 small onions, chopped
1″ piece grated ginger
1″ piece grated turmeric (or 1-2 tsp dried turmeric powder)1/2 tsp ground cumin
5-8 carrots chopped (reserve at least 1/2 – see directions)
1 large cauliflower (reserve at least 1/2 – see directions)
1 quart veggie broth (I make my own when i can – Mineral Rich broth recipe)
1 mini can coconut milk
Salt to taste
Recipe Directions:
1. In a large soup pot, heat the oil and add the onions and saute. Add salt, ground turmeric root, ground ginger root, and cumin. Saute until soft. (PS – kitchen stores have a special little ceramic grated that works well for these roots.)
2. To your soup pot, add your broth, coconut milk, half the chopped carrots and half the chopped cauliflower. Cook until the veggies are tender and then puree either in a blender or with an immersion hand blender. ** If you do the blender, be careful. Hot soup in a blender can blow the top off. I use a hand blender but if I was putting it in my Vita-mix, I’d cool it a bit and then still put a towel over the lid so that if it does blow the top off, it doesn’t go everywhere. And start the blender on low, low, low!
3. After your soup is pureed to your satisfaction, add the rest of the cauli and carrots and cook until they are tender.
You can garnish with fresh herbs if you want – parsley or cilantro would both be good.
Note: I don’t cook with salt. I add it at the table as I eat the food. It doesn’t matter how much salt I put in a dish, Johny still adds salt to the dish so this keeps him from turning into beef jerky LOL 🙂
