Last week, I bought a large bag of apples thinking it was a good deal and they looked so good, I just couldn’t pass it up! Seeing as more than half of them are still sitting on my counter a week later, I thought I better to something with them before they all go bad. This recipe is great on grain free muffins or toast. Save this recipe for Christmas morning breakfast or for your big family dinner!
Ingredients:
3 lbs apples (any kind), cored and chopped- you can leave the skin on*
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 cup filtered water
Directions:
1. Place everything in your crockpot and cook until tender.
2. Using an immersion blender, blend the apples into applesauce. (*If you don’t have an immersion blender, you can peel the apple skins at the beginning and this way you can mash them with a potato masher or fork. You could also transfer it to a regular blender.)
3. To become apple butter, the applesauce needs to further cook down. Partially cover the pot but leave a vent for steam to escape. Cook on low for another 6-8 hours or cook on high for 45 minutes, then reduce to low. If you cook it on high be sure to keep an eye on it so the apples don’t burn. You could also transfer it to a saucepan and heat on the stove over medium-low heat, stirring occasionally until it thickens.
