Fruit Salad with Honey Lime Dressing

Here’s something to satisfy your sweet tooth! If you’re not familiar with coconut sugar it is a great alternative to the white processed sugar. You can substitute it 1:1 for regular sugar in any recipe.

Also, don’t forget about the Dirty Dozen when buying your produce! The Dirty Dozen is a list of fruits and vegetables that have been found to contain the most pesticide residue, so you may prefer to choose the organic options (meaning foods on this list are highly sprayed!)

The Dirty Dozen:
1. Apples
2. Strawberries
3. Grapes
4. Celery
5. Peaches
6. Spinach
7. Sweet Bell Peppers
8. Nectarines
9. Cucumbers
10. Cherry Tomatoes
11. Snap Peas
12. Potatoes

 

For this recipe you may choose any fruits you like! This could be great for a 4th of July potluck!

This recipe makes about 2-4 servings, for a potluck or larger dinner party you may want to double or triple the recipe!

Ingredients:

Fruit Salad
1 pint organic strawberries
4 kiwis, peeled
3 pineapple spears
1/2 pint organic blueberries

Honey Lime Dressing
Juice of 1-2 limes
3 Tbsp raw honey

 

Directions:

1. Finely chop all fruit and place in serving bowl.
2. In a small bowl, mix honey and lemon.
3. Just before serving, toss the fruit with the dressing and serve!
