I love love love munching on nuts and these are one of my fav’s! Walnuts provide those invaluable essential omega 3 fatty acids. I think you might be able to pull this off using honey but I haven’t tried it that way. I think you could also have some fun and add a little rum for a fancy flavor if you want to kick it up a bit.
Other spices that might work: cayenne, cardamom, cumin, or curry! Use your imagination and what you have in your cupboard!
Ingredients:
- 1/4 cup organic maple syrup
- 3 T coconut oil
- 2 tsp ground cinnamon
- 2 tsp fresh orange zest (or 1 tsp dried orange zest)
- 1 tsp Himalayan sea salt (which contains 80+ trace minerals)
- 1 cup raw pecan
- 1 cup raw walnuts
- 2 cups raw cashews
Directions:
Cover and turn the heat to high. Cook until a light syrup forms at the bottom, about 1 hour but watch it! Set your timer for 45 minutes and beginning checking since all crock pots are different.Turn the heat to low, stir the nuts and continue to cook, stirring every 20 minutes, until the nuts are glazed and the bottom of the cooker is drying – about 1 hour. If you need to and your crock pot has a “warm” setting, you can vacillate between low and warm so they don’t burn.Turn the slow cooker off, remove nuts to a cutting board or unbleached paper and let the nuts harden, stirring occasionally, up to 2 hours. Try not to eat them all in one sitting!
