Yum! Broccoli salad is one of my favorite summer sides! Especially when the broccoli comes straight from the garden! The tricky part of making salads like this is the mayonnaise. We’ve all heard mayonnaise is bad for us because it is loaded with fat and does not provide much nutritional benefit. My advice would be to make your own mayo or buy a mayo that you like but eat sparingly. We all need fat in our diet, but too much of anything may not have the best health outcomes. Look for mayonnaise brands that are lower in saturated and trans fats. Or if you’d like to try to make your own, here’s a great recipe for homemade paleo mayo.
Ingredients
2 cups broccoli, cut into bite sized pieces
1 apple, diced
1/3 cup cup chopped pecans or walnuts
1/3 cup craisins
3 slices bacon, cooked crisp and chopped
1/2 cup mayo
2 Tbsp apple cider vinegar
1 tsp honey
salt and pepper to taste
Directions
1. In a medium sized serving bowl, combine broccoli, apple, nuts and bacon.
2. In a small bowl, mix together mayo, vinegar and honey to make the dressing.
3. Add the dressing to the serving bowl with broccoli. Serve or chill until ready to serve.
